Sausage Hash with Poached Eggs

This easy recipe for sausage hash with poached eggs is the perfect breakfast or brunch, and you can vary the sausage to spice it up your way!

The Southern husband is a big, big fan of this particular hash I make from time to time.  Instead of the more usual corned beef variety, this version combines potatoes and onion with chopped sausage, and cooks it all up together until the potatoes are a perfect blend of tender and crispy.  Top the whole thing off with a soft cooked egg, and you are pretty much in breakfast heaven.  Or in our case, also lunch and dinner.

HOWEVER.  Before I get to the recipe, here is a sneak preview of the magical excitement that went on around here last weekend.  My baby girl, my precious Southern daughter married the love of her life on Saturday, and It. Was. Perfect.  We had amazing photographers and I will be sure to share those pictures when they arrive, but with love and thanks to some of our friends who had their camera phones at the ready, here’s a sneak peek!

The beautiful bride and her maid of honor, who has been her best friend since kindergarten.  They are both so beautiful I don’t know what to say.  Meantime, we had carefully not let the Father of the Bride see the dress until the big day, and this next picture is his first look at his beautiful girl in her wedding dress…

My heart just about exploded with joy watching his face.   Those two.  They are my everything, except now I need to add in my sweet new son-in-law…

…dancing his way into the reception with his bride.  The love in that room was a sight to behold.  You could feel it in every corner of the room.  And lastly…

…the Southern husband and me in our wedding finery. I think we were watching them cut the cake, but this was pretty much how I felt for the entire day.  Joyful, blessed, grateful…it truly was magical.  As more pictures come in you know I will be sprinkling them in with my recipes for weeks to come, but in the meantime…back to the sausage with poached egg.

Once you have cooked up your delectable hash, soft cook your egg.  You can either poach it, which is my favorite way to make it (click here for my foolproof egg-poaching method) or soft boil it,  or even cook it sunny side up.  Whatever way you choose, slide in on top of the hash and slice into that egg.

Description

This easy recipe for sausage hash with poached eggs is the perfect breakfast or brunch, and you can vary the sausage to spice it up your way!


Ingredients

  • 2 pounds red potatoes, cut into 1/2 inch dice
  • 1 large onion, cut into 1/2 inch dice
  • 4 tablespoons butter
  • 6 ounces cooked sausage, cut into 1/2 inch dice (see note)
  • Salt and fresh ground pepper
  • Four eggs, poached or soft boiled and peeled (see note)

Instructions

  1. Melt butter in large skillet over medium heat. Stir in potatoes and onions and saute for 15 minutes, stirring occasionally.
  2. Add the sausage and a pinch each of salt and pepper and saute another 5-10 minutes until potatoes are brown. Season to taste with more salt and pepper as needed.
  3. Divide among four dishes and top each with a poached or soft boiled egg. Break the egg so the yolk spills into the hash. Breathe deeply and dig in.

Notes

You can vary the spiciness of this dish by using anything from andouille or chorizo sausage (spicy!) to kielbasa (mild) depending on your taste.
