I’m guessing you already know that pesto, that delightful sauce made out of basil and pine nuts and garlic and other delectable things, is terrific mixed with pasta, but did you know that it is also an awesome addition to roasted salmon? Some pesto, some salmon filets and about 20 minutes are all that stand between you and a delectable, healthy supper…and that includes the time it takes to preheat the oven. The dress is comfy and flowy and I intend to dance the night away in it, but it does require me staying the same size for another 250 days, and things like roasted salmon pesto are going to get me to the wedding finish line.
Now a word about pesto. You absolutely can buy it already made in the supermarket – it’s usually either with the pasta sauces or in the refrigerated section, or both – but if you have an extra five minutes and some nice basil you can also whirl it up yourself. My go-to pesto recipe is this one on my friend Robyn’s wonderful Add A Pinch website – it comes out perfectly every time. If I don’t have pine nuts handy I substitute walnuts, which I am pretty sure Robyn would be a-ok with.

The salmon will be flaky and tender, and the pesto will give it a rich, bright taste. We like to serve ours over cauliflower rice, but it would be just as good over regular rice, orzo pasta or (if you are the Southern husband) a bed of creamy cheese grits. I’m trying to lay off the creamy cheese grits for 250 days, but on day 251 you know what I am having for breakfast. WITH BACON.

- 4 tablespoons pesto (see note)
- 2 four ounce boneless salmon filets
- Fresh ground pepper
- Preheat oven to 400 and line a rimmed baking dish with foil.
- Place the salmon filets on the foil and spread generously with pesto.
- Roast for 10 minutes. Grind some fresh pepper on top and serve! We like this recipe with cauliflower rice, but regular rice, polenta, grits or orzo pasta would also be great.
