Creamy spicy green goddess dressing makes a fabulous marinade, dip and yes, salad dressing! Whirl some up in your blender and try it.
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 4 scallions, trimmed and chopped
- 1/4 cup fresh parsley
- 1 tablespoon fresh tarragon
- 1 tablespoon lemon juice
- 1 garlic clove
- Pinch each of salt and pepper
- Put all ingredients in a blender and puree until smooth. Store in the fridge until ready to use.
Mix 1/2 cup mayo and 1/2 cup dressing together for a spicy creamy veggie dip. You can also marinate chicken in this dressing and grill it – make sure to drizzle some extra dressing on the top when you serve it up!
