This easy recipe for welsh rarebit bites turns your favorite comfort food into a fun appetizer! Perfect for your next party – or even a light dinner!

I love recipes that take regular sized comfort foods and turn them into little mini-sized versions just right for nibbling, and this recipe for Welsh Rarebit Bites does that very thing.  If you haven’t had the wonder that is Welsh Rarebit (or Welsh Rabbit, as it is pronounced at my house), it’s a basically melted cheese poured over toast.  Which in and of itself is a glorious thing.

There are tons of variations out there that include things like beer, tomatoes, bacon, apples and other deliciousness added to the cheese and toast, but however you make it, it is usually a regular size piece or two of toast with a generous ladle of cheese.  THESE babies are teeny little baguette toasts topped with cheese and a slice of tart apple to give it a little extra punch.  They are just plain perfect for, say, a New Year’s nibble with a glass of champagne.  Let’s make some!

You want to start with a nice thin baguette, mainly because the smaller these are, the more you can eat.  Butter them up and toast them until they are golden.  Now top with a half an apple slice, and a thin slice of cheddar.  Broil them up until the cheese just melts.

That’s the basic recipe, but when I am feeling even more ambitious – or if I want to get two appetizers for the price of one – I make up a batch of beer cheese, which takes no time and is one of my all time favorites.  Click here for that scrumptious recipe.  Then instead of using a slice of cheddar, I use a spoonful of beer cheese, and then broil as usual.  Even more cheesy deliciousness!

Description

This easy recipe for welsh rarebit bites turns your favorite comfort food into a fun appetizer! Perfect for your next party – or even a light dinner!


Ingredients

  • 1 thin small baguette, cut into thin slices
  • Soft butter
  • One apple, sliced thinly into rounds, then cut the rounds in half
  • Thinly sliced cheddar cheese

Instructions

  1. Preheat broiler and line a cookie sheet with foil.
  2. Spread the baguette slices on both sides with butter, then toast until golden.
  3. When the baguette slices are cool enough to handle, lay them on the cookie sheet in a single layer. Top each one with an apple piece and then a slice of cheddar.
  4. Place in broiler, watching carefully through the door until the cheese melts.
  5. Remove and serve!

    For years I thought it was “rabbit,” and the whole dish confused me. And then I learned what it was, and I had it at a pub and it was great! I’ve never made it on my own, though. I really want to! This looks so good!

      I know! Personally, I’m not sure I could ever eat rabbit – but this is a whole different thing! :) I also have a recipe for a regular non-appetizer version if you want it – just let me know. :)

    i love mini foods too! i’ve always been a bit confused about what welsh rarebit actually consists of, and i’m still not really sure. regardless, these bites look delicious!

    I’ve never had this before, but now that I know what it is I totally want to try it. Melty cheese on bread is something I could pretty much live on. :) And cheese and apple together is always great. This looks fabulous!
