Brown Sugar Bacon Waffles

  • 8 slices bacon
  • 2 tablespoons brown sugar
  • 3 cups flour
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 eggs
  • 2 1/2 cups buttermilk
  • 2/3 cup vegetable oil
  • 1/2 teaspoon vanilla extract


  1. Preheat your oven to 375 degrees.
  2. Line a rimmed baking sheet with foil, arrange the bacon in a single layer and sprinkle with 2 tablespoons brown sugar. Bake until the bacon is crispy and the brown sugar is caramelized, about10 to 15 minutes. Transfer the bacon to a cutting board, cut it into small pieces and set aside.
  3. Preheat your waffle iron and give it a spritz of cooking spray.
  4. Whisk the flour, 1/2 cup brown sugar, baking powder, baking soda, and salt together in a large bowl. Beat the eggs, buttermilk, vegetable oil, and vanilla together in a separate bowl, then stir the egg mixture into the flour mixture. Add the bacon and stir.
  5. Ladle the batter into the preheated waffle iron and cook until the waffles are golden brown.  Serve with lots of Vermont maple syrup.
