Chicken Pot Pie with Mashed Potato Crust

I do love a good pot pie, and I love it even more when the pot pie crust is made out of creamy, dreamy mashed potatoes.  And I also love dishes that I can make ahead and then just bake up later when things are busy.  I get all of this and more with this easy recipe for chicken pot pie with mashed potato crust…the more is the delicious taste of tender chicken with carrots and celery in a light herbed sauce, and did I mention the mashed potato topping?  Ready for your new favorite pot pie?  Let’s make it!

Chicken Bog

What on earth is chicken bog, you ask? I know you are thinking that, and so was I one day when I was scrolling through my Facebook feed and my friend Kiera had written on her page that she was making her all-time favorite comfort food. Chicken bog. It took me about 3 seconds to email her and say hey, what on earth is chicken bog, Kiera? And as it turns out, chicken bog is a conglomeration of rice and sausage and shredded chicken and onion, and once you make chicken bog for yourself everything will be right with your world. Which just goes to show you that scrolling through Facebook is an important activity in life, because if I hadn’t been scrolling through Facebook I might have lived my whole life without having known about chicken bog.

And to celebrate the face that this all happened, I’m going to give away a few sets of the most beautiful books I know, but first…chicken bog. Let’s make it!

Rosemary Chicken Soup

This rosemary chicken soup is one of my best comfort food recipes. It’s a warm and wonderful conglomeration of tender chicken and vegetables simmered up with the nutty taste of barley, and infused with one of my favorite herbs, aromatic rosemary. It’s perfection on a chilly winter day, when you are snuggled under your favorite blanket on the sofa, holding a warm mug of soup in your hands with a fire crackling in the fireplace and your favorite movie about to begin. It’s chicken soup wonderfulness at its most wonderful. Let’s make it!
