We are huffing and puffing our way towards spring here in these parts. Winter is hanging on for dear life, and March has about 48 hours to get its act together and go out like the lamb that it is supposed to be at this point. My barbecue grill still has a 2 inch wall of snow all around it, so I can't in good conscience send the Southern husband out there yet to make anything vaguely summery-tasting, and frankly, it's still so chilly that I am still jonesing for winter comfort food anyway. So here's my effort to meet halfway between warm weather food (sandwiches!) and cold weather food (chicken pot pie!), and I gotta tell you, it may be my new favorite transitional supper.

I love baked potatoes with a ridiculous amount of love. And my love for them spilleth over when they are topped or stuffed with other things I love, like eggs or taco spices or cheeseburger fixings. I also love pizza with a ridiculous amount of love, so this recipe was inevitable. Baked potato, pizza sauce, mozzarella cheese, and just for good measure, some pepperoni. Because if you are going to mash up your baked potato with your pizza, you might as well go the full monty!

I have only recently become a fishy person. I have loved shellfish of all kinds all my life, but regular old fish? Not so much. My mama kept telling me if I would just TRY it I would like it, and while so far that has not worked with eggplant, mushrooms, olives or beans of any kind, I gotta hand to it to her on fish, because now I LOVE FISH. And since it took me so dang long to get around to liking seafood, I have many many many recipes I need to figure out so that I get all the fishies that are coming to me. My currently favorite, easy, totally reliable way to cook it? In parchment packages. It's like getting a fishy present!

We've all heard the term "steak and potatoes," and many of us dearly love that particular phrase and all that it conjures up. Juicy steak. Creamy potatoes. I know I am helpless in the face of that combo...but then I remembered my love affair with whipped cauliflower, and I started to wonder. Just when I think I can't possibly come up with another way to slice and dice macaroni and cheese (and please, take a look at my related posts at the bottom of this post to see what I mean!), I somehow manage to come up with another way. My brother recently asked me if I had to pick a last meal what it would be, and after much thought I have picked...macaroni and cheese. (Side note: We get along just fine, andI am almost certain this was general curiosity and I have nothing to be worried about. ;-) ) Which maybe explains all my varieties of it, and this one has two great things going for it. Lots of colorful veggies, and the whole thing cooks all together in one pot all at the same time. If that is mac and cheese heaven, I don't know what is!

Happy Saint Patrick's Day one and all (or as my Irish mama calls it, The Day!)...it's finally here, and I know all of you are Irish today regardless of where your ancestors hail from. Mine hail from Ireland, which is why you won't catch me wearing any green today. My Irish grandmother Aileen alway said to me, "Kate, you should never wear green on Saint Patrick's Day because you don't need to - you have Irish blood in your veins!" I do eat all the Irish food around me though, including my mama's scones and brown bread, and of course the classic corned beef and colcannon. But if you want to mix things up a little on The Day, you could also do bangers and mash. These are just as much English as they are Irish, which introduces a little harmony as well. Plus they are easy and delicious, especially when you top them with a little onion gravy.
