Avocado Toast with Poached Egg

I think at this point I have gotten across the fact that I could pretty much subsist on a diet of nothing of bacon, if necessary.  But I’m not sure I have adequately gone over my undying love for toast, or for poached eggs, or for avocado.  Especially mashed up avocado.  There are very few things in life that toast or a poached egg or some mashed avocado can’t fix.  And when you put the three of them together…I have no words.

Except I’m me, and of course I have words!  My first words are about the toast.  My philosophy about toast (and really this applies to bread in general) is that life is too short not to have really good bread around at all times.  I do love making the world’s easiest bread recipe (click here for that one), but I also totally shun the packaged bread aisle in my supermarket for the bakery section where right this moment they are working away making warm and wonderful bread Just For You.  I usually go for either Pullman or ciabatta bread – and if you ask them, they will even slice it for you.  I mean really…it doesn’t get easier than that.  And wonderful fresh bread makes the best toast, and toast is the answer to all problems.

My second words are about poached eggs.  Specifically poached eggs on toast.

After many moons of driving over to my mama’s house specifically so she could poach me an egg, I finally figured out a fool-proof method of making them in my own kitchen (and click here for that one), so now I can actually make myself a poached egg on toast whenever the urge hits me.  Which is often.

And then one day, it occurred to me that as glorious as buttered toast with a poached egg is, avocadoed toast with a poached egg might actually be as good.  Or better.  So I mashed up an avocado with a little salt and pepper and lemon juice, slathered it on some toast, popped a poached egg on top and tested it out.

Oh yes.  Butter, I love you but you have some serious green competition here.

So now I will actually end all the words so you can make yourself some avocado toast with poached egg before one more second goes by!



Avocado Toast with Poached Egg
Serves: 1 serving, can be increased infinitely!
  • One slice Pullman or other good quality bread
  • One half avocado
  • One tablespoon lemon juice
  • Salt and pepper
  • One egg
  1. Toast the bread to your liking (I like mine nice and dark!)
  2. Mash the avocado with a fork until it has just a few lumps in it. Stir in the lemon juice, and season to taste with salt and pepper.
  3. Poach the egg - you can find my favorite poaching method by clicking here
  4. Spread the avocado on the toast, top with the poached egg and enjoy immediately!

    Kate, this is my go to healthy breakfast! I usually make it on sprouted bread toast and add some Herdez salsa and pepitas to the avocado. Of course, bacon would be a grand addition too!

    I’m eating this as we speak. I added the bacon, and used your method for the poached eggs. Perfect, perfect, perfect!

    The eggs were nice, compact ovals, perfectly poached, with all of the swirly stuff left in the pot, to scoop up if you want (I didn’t). I layered a couple slices of bacon on top of the avocado spread, then scooped the eggs on top.
